Preparation

  • Rinse the black-eyed peas under cool water and soak them overnight in a large bowl of water.

Cooking

  • After soaking, drain the peas and set aside. In a large pot, add the soaked peas and six cups of water or broth.
  • Incorporate the chopped onion, minced garlic, and bell pepper, and add ham hock or smoked sausage if using.
  • Turn the heat to high and bring the mixture to a boil, stirring occasionally.
  • Once boiling, lower the heat, cover the pot, and let the peas simmer gently for about 1 to 1.5 hours.
  • Check the peas after an hour for tenderness. Continue cooking if too firm.
  • Season with salt, black pepper, and cayenne pepper, adjusting to taste.
  • Remove from heat and garnish with chopped green onions before serving.
