  • 1 medium spaghetti squash
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil for garnish (optional)

Preparation

  • Gather all your ingredients. Wash and chop the vegetables—onion, garlic, and bell pepper. Cut the spaghetti squash in half lengthwise and remove the seeds with a spoon.
  • Preheat the oven to 375°F (190°C).

Roasting and Cooking

  • Place the spaghetti squash cut-side down on a baking sheet and roast it for 30–40 minutes until tender.
  • While the squash is roasting, heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic; sauté for about 2–3 minutes until fragrant.
  • Add the ground turkey to the skillet, breaking it apart as it cooks. Stir occasionally for about 5–7 minutes until browned and cooked through.
  • Mix in the chopped bell pepper and drained diced tomatoes. Sprinkle in the Italian seasoning, salt, and pepper, cooking for another 5 minutes.
  • Once the spaghetti squash is roasted, scrape out the flesh into spaghetti-like strands and add them to the turkey mixture. Toss everything together.

Assembly and Baking

  • Transfer the mixture into a greased 9×13-inch baking dish and spread it evenly.
  • Sprinkle the shredded mozzarella and grated Parmesan cheese on top.
  • Bake in the preheated oven for 20–25 minutes until the cheese is melted and bubbly.

Serving

  • Let it rest for a few minutes before serving. Finish with fresh basil as a garnish.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 5 days. This casserole freezes well for up to three months. Reheat in the microwave or oven until warmed through.
