Ingredients
  

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup milk
  • 1 large egg
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • ½ cup cinnamon sugar for topping

Instructions
 

  • In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • In another bowl, mix milk, egg, melted butter, and vanilla until smooth.
  • Pour wet mixture into dry ingredients and stir until just combined. Do not overmix.
  • Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
  • Pour 1/4 cup batter per pancake into the skillet. Cook until bubbles form on the surface.
  • Flip and cook the other side until golden brown, about 1–2 minutes.
  • Transfer pancakes to a plate and immediately sprinkle with cinnamon sugar.
  • Repeat with remaining batter and serve warm with syrup, fruit, or whipped cream if desired.

Notes

For a healthier twist, use coconut sugar instead of white sugar or almond flour for gluten-free pancakes. Serve with chocolate sauce for an authentic churro experience.
