  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth Use gluten-free broth if necessary.
  • 1 teaspoon chili powder Adjust according to your taste.
  • 1 teaspoon cumin

Preparation

  • Gather all your ingredients. Chop the onion and mince the garlic.

Cooking

  • Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion is translucent.
  • Add long-grain rice to the pot and stir for about 2 minutes to toast the rice.
  • Pour in diced tomatoes, vegetable broth, chili powder, cumin, and salt. Stir to combine.
  • Increase heat and bring the mixture to a boil for about 5-7 minutes.
  • Once boiling, reduce heat to low, cover, and let it simmer for 20 minutes.
  • After 20 minutes, check rice. If needed, cook for a few more minutes.
  • Remove pot from heat, fluff rice with a fork, and let it sit for a few minutes before serving.
  • Taste and adjust seasoning before serving warm.
