  • 4 chicken thighs bone-in, skin-on preferred
  • 2 tbsp gochujang (Korean chili paste)
  • 2 tbsp soy sauce use tamari for gluten-free
  • 1 tbsp honey or sugar
  • 1 tbsp sesame oil
  • 2 garlic cloves minced
  • 1 inch fresh ginger minced
  • salt and pepper to taste

For Serving

  • steamed rice optional
  • fresh vegetables broccoli, bok choy, or snap peas

Instructions
 

  • In a medium bowl, whisk together gochujang, soy sauce, honey, sesame oil, minced garlic, and ginger. Season with salt and pepper to taste.
  • Add chicken thighs to the marinade, coating evenly. Let marinate for at least 30 minutes or overnight for maximum flavor.
  • Preheat oven to 400°F (200°C) while the chicken marinates.
  • Line a baking sheet with parchment paper and place a wire rack on top for even cooking.
  • Arrange chicken thighs skin-side up on the rack. Roast for 25–30 minutes, or until internal temperature reaches 165°F (74°C).
  • Allow chicken to rest for 5 minutes before serving. Garnish with sesame seeds and chopped green onions if desired.
  • Serve over steamed rice or with fresh vegetables for a balanced, flavorful meal.

Notes

For extra crispy skin, broil the chicken for 2–3 minutes after roasting. Adjust spice level by adding more or less gochujang. Store leftovers in an airtight container for up to 3 days in the refrigerator or 3 months in the freezer.
