Ingredients
  

Chicken and Coating

  • 1 cup buffalo sauce Adjust heat level to your preference.
  • 1 cup breadcrumbs Use gluten-free breadcrumbs for a gluten-free option.
  • ½ cup grated Parmesan cheese Substitute with dairy-free cheese for a dairy-free version.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Salt and pepper

Sides

  • 2 cups cooked rice Seasoned with olive oil and dried herbs.
  • 1 tablespoon olive oil
  • 1 teaspoon dried herbs (e.g., parsley or thyme) Mix well with cooked rice.

Instructions
 

Preparation

  • Gather all your ingredients on the countertop.
  • Dice the chicken breast into bite-sized pieces.
  • Preheat the oven to 400°F (200°C).

Coat the Chicken

  • In a mixing bowl, add diced chicken and pour in the buffalo sauce. Stir to coat evenly.
  • In another bowl, combine breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  • Coat each buffalo-coated chicken piece with the breadcrumb mixture.

Baking

  • Line a baking sheet with parchment paper and arrange the coated chicken bites.
  • Bake for 20 to 25 minutes, until golden-brown and cooked through.

Prepare Sides

  • While the chicken is baking, mix cooked rice with olive oil and herbs.

Serve

  • Plate the baked chicken bites alongside the seasoned rice and enjoy.

Notes

Allow chicken bites to cool before storing. Store in an airtight container in the refrigerator for up to four days. To reheat, bake at 350°F (175°C) for 10 minutes.
