Preparation

  • Start by gathering all your ingredients. Crack the eggs into a bowl and measure out the chipotle sauce, salt, and pepper.
  • Use a whisk or fork to beat the eggs well with the chipotle sauce, salt, and pepper until the mixture is smooth.
  • Place a non-stick skillet over medium heat and allow it to warm up.
  • Once the skillet is ready, pour the egg mixture into the pan and gently stir with a spatula until fully cooked, about 3-4 minutes.
  • While the eggs are cooking, toast the bread or English muffin until golden brown.
  • Remove the toasted bread from the toaster, place the scrambled eggs on one slice, add cheese if desired, layer on avocado slices, and top with the second slice.
  • Top the sandwich with fresh cilantro if desired and cut in half for easy handling.

Notes

Leftovers can be stored in the refrigerator for up to 2 days. To reheat, place the sandwich in a toaster or microwave. For freezing, seal tightly in freezer bags and thaw overnight before reheating.
