Instructions
Boil ramen noodles for 2–3 minutes until just softened. Drain and set aside.
In a bowl, whisk together soy sauce, sriracha, oyster sauce, sesame oil, and brown sugar.
Heat a wok over medium-high heat. Add a little oil and sauté garlic for 30 seconds.
Add carrots and bell peppers. Stir fry for 3–4 minutes.
Push vegetables aside, crack the egg into the pan, and scramble (optional step).
Add cooked noodles and pour sauce over. Toss to combine and cook for 2 more minutes.
Serve hot, topped with sesame seeds or green onions if desired.
Notes
Adjust spiciness by increasing or decreasing sriracha. Add tofu or chicken for protein.
