Spicy Ramen Noodle Stir Fry

Ingredients
  

Stir Fry Base

  • 2 packs ramen noodles discard seasoning packets
  • 1 cup carrots julienned
  • 1 cup bell peppers sliced
  • 2 cloves garlic minced
  • 1 egg optional

Spicy Sauce

  • 3 tbsp soy sauce
  • 1 tbsp sriracha
  • 1 tbsp oyster sauce or vegan oyster sauce
  • 1 tsp sesame oil
  • 1 tsp brown sugar

Instructions
 

  • Boil ramen noodles for 2–3 minutes until just softened. Drain and set aside.
  • In a bowl, whisk together soy sauce, sriracha, oyster sauce, sesame oil, and brown sugar.
  • Heat a wok over medium-high heat. Add a little oil and sauté garlic for 30 seconds.
  • Add carrots and bell peppers. Stir fry for 3–4 minutes.
  • Push vegetables aside, crack the egg into the pan, and scramble (optional step).
  • Add cooked noodles and pour sauce over. Toss to combine and cook for 2 more minutes.
  • Serve hot, topped with sesame seeds or green onions if desired.

Notes

Adjust spiciness by increasing or decreasing sriracha. Add tofu or chicken for protein.
