  • 2 cups fresh spinach Washed and dried
  • 1 cup mozzarella cheese, shredded You can substitute with cheddar cheese
  • ½ cup cream cheese, softened
  • ¼ cup parmesan cheese, grated
  • ½ tsp garlic powder
  • ¼ tsp salt Adjust to taste
  • ¼ tsp black pepper Adjust to taste
  • ¼ cup almond flour Can be substituted with coconut flour

Preparation

  • Gather all your ingredients and wash the fresh spinach thoroughly, then dry it.
  • Preheat your oven to 375°F (190°C).

Cooking

  • In a medium saucepan, lightly sauté the spinach over medium heat until it wilts for 2-3 minutes.
  • In a large mixing bowl, combine the sautéed spinach with mozzarella cheese, cream cheese, grated parmesan, garlic powder, salt, and black pepper. Mix until all ingredients are fully incorporated.
  • Form the mixture into small balls or patties, about the size of a golf ball.
  • On a plate, spread the almond flour and roll each spinach ball in it until fully coated.
  • Line a baking sheet with parchment paper and arrange the coated balls, spaced apart.
  • Bake in the preheated oven for 15-20 minutes, or until golden brown.
  • Remove from the oven and let cool for a few minutes before serving.

Notes

These bites can be served warm and are best enjoyed with dipping sauces like marinara or ranch dressing. Allow to cool before storing leftovers in an airtight container.
