Ingredients
  

  • 12 oz pasta penne, farfalle, or your choice
  • 2 tbsp olive oil
  • 1 lb salmon fillets skin removed
  • salt and pepper to taste
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup Parmesan cheese freshly grated
  • 2 cups fresh spinach
  • 1 tsp lemon zest
  • 1 tbsp lemon juice

Instructions
 

  • Bring a pot of salted water to boil. Cook pasta according to package instructions until al dente. Drain and set aside, reserving some pasta water.
  • Season salmon with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook salmon 4-5 minutes per side until flaky. Remove, cool slightly, then flake into pieces.
  • In the same skillet, sauté minced garlic for 1 minute until fragrant.
  • Add heavy cream and chicken broth. Simmer, then stir in Parmesan until smooth and creamy.
  • Stir in spinach and cook until wilted.
  • Add salmon, pasta, lemon zest, and lemon juice. Toss to combine. If needed, adjust sauce consistency with reserved pasta water.
  • Taste and adjust seasoning with more salt, pepper, or lemon juice if desired.
  • Serve hot, garnished with extra Parmesan and lemon slices if desired.

Notes

Use gluten-free pasta or dairy-free substitutes like coconut cream and nutritional yeast for dietary adjustments.
