Preparation

  • Gather all your ingredients: chop sun-dried tomatoes, mince garlic, and rinse spinach.

Cooking the Pasta

  • Boil salted water and cook pasta according to package instructions until al dente, approximately 8-10 minutes. Drain and set aside.

Cooking the Mixture

  • In a large skillet, heat olive oil over medium heat.
  • Add minced garlic and sauté for about one minute until fragrant but not browned.
  • Stir in chopped sun-dried tomatoes and cook for 2 minutes to soften.
  • Add fresh spinach and cook for 2-3 minutes until wilted.
  • Combine the cooked pasta with the mixture, tossing well to coat.
  • Season with salt and pepper to taste.

Serving

  • Transfer to plates or a serving bowl and sprinkle with grated Parmesan cheese, if desired. Serve warm.

Notes

For a gluten-free version, use gluten-free pasta. You can also add protein like grilled chicken, shrimp, or chickpeas. Consider squeezing fresh lemon juice over the dish before serving for added brightness.
