Ingredients
  

  • 8 oz pasta spaghetti or penne
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes halved
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions
 

  • Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve 1 cup pasta water, then drain.
  • Heat olive oil in a skillet over medium heat. Add garlic and sauté for 30 seconds until fragrant.
  • Add cherry tomatoes and cook for 3–4 minutes, until softened and juicy.
  • Stir in fresh spinach and cook until wilted, about 2 minutes.
  • Add drained pasta to the skillet and toss with the spinach and tomato mixture. Use reserved pasta water as needed to loosen the sauce.
  • Season with salt and pepper. Serve warm with grated Parmesan cheese, if desired.

Notes

For extra flavor, add a pinch of red pepper flakes, fresh basil, or a squeeze of lemon juice before serving. You can also top with grilled chicken or shrimp for added protein.
