Ingredients
  

For the eggs

  • 6 large large eggs, hard-boiled and cooled
  • 1 to 2 cups water, enough to cover eggs Use as needed
  • 1 teaspoon black food coloring gel
  • 1 tablespoon white vinegar

For the filling

  • 3 tablespoons mayonnaise Can substitute with avocado or vegan mayo
  • 1 teaspoon Dijon mustard Can substitute with plain mustard
  • 1 teaspoon apple cider vinegar
  • 1 pinch kosher salt
  • 1 pinch freshly ground black pepper

For garnish

  • Smoked paprika For garnish
  • Black sesame seeds For garnish
  • Finely chopped chives For garnish

Preparation

  • Gather all ingredients to make the cooking process smoother.
  • Place the eggs in a pot, cover with cold water, and bring to a boil.
  • Boil the eggs for 9-12 minutes for perfect hard-boiled eggs.
  • Once cooked, place eggs in an ice bath or under cold running water to cool.
  • Gently tap the cooled eggs with a spoon to create a fine network of cracks.
  • In a bowl, mix 1 to 2 cups of water with 1 teaspoon of black food coloring gel.
  • Submerge the cracked eggs in the coloring solution and refrigerate for 3 hours or overnight.
  • Remove eggs from the solution, rinse under water, and add a splash of white vinegar.
  • Slice the peeled eggs in half lengthwise and scoop the yolks into a mixing bowl.
  • Mash the yolks and mix with mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper until smooth.
  • Spoon or pipe the yolk mixture back into the egg white halves.
  • Garnish with smoked paprika, black sesame seeds, and finely chopped chives.

Notes

Store in an airtight container in the refrigerator for up to three days. Avoid freezing once filled, as texture may change.
