Ingredients
  

Cookie Dough

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Decoration

  • ½ cup rainbow sprinkles or nonpareils for rolling

Instructions
 

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large bowl, cream together butter and sugar until light and fluffy, about 2–3 minutes.
  • Add egg and vanilla extract, mixing until fully combined.
  • In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until a soft dough forms.
  • Roll dough into 1-inch balls, then roll each ball in rainbow sprinkles to coat evenly.
  • Place balls 2 inches apart on prepared baking sheets. Gently flatten each ball slightly with your hand.
  • Bake for 9–11 minutes or until edges are just beginning to turn golden. Do not overbake for soft cookies.
  • Let cool on the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

Customize these cookies for any holiday by swapping the sprinkle colors — red and green for Christmas, pastels for Easter, or orange and black for Halloween. For extra flavor, add almond or lemon extract to the dough.
