  • 8 oz tortellini (fresh or frozen)
  • 1 lb steak (sirloin or flank, sliced thin)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • 1 cup spinach
  • Salt and pepper to taste
  • Parmesan cheese (for serving)

Preparation

  • Gather all your ingredients to ensure everything is ready when you start cooking. Slice the steak thinly and mince the garlic. Halve the cherry tomatoes and rinse the spinach.

Cooking

  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the sliced steak and season with salt and pepper. Cook until browned, about 3-4 minutes, then remove from skillet and set aside.
  • In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  • Add the halved cherry tomatoes into the skillet and cook for 2-3 minutes until they begin to soften.
  • Introduce the tortellini to the skillet, along with enough water to cook it according to package directions. Stir gently and cook for about 5-7 minutes or until tender.
  • Once the tortellini has cooked, stir in the spinach and mix until wilted, about 1-2 minutes.
  • Return the cooked steak to the skillet and mix everything thoroughly. Allow it to heat through for another minute.
  • Serve the Steak Tortellini hot, topped with freshly grated Parmesan cheese.
