  • 2 tablespoons oyster sauce Use plant-based for vegan option
  • 1 tablespoon brown sugar
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 2 green onions chopped

Preparation

  • Start by gathering all your ingredients. Thinly slice the beef sirloin to ensure it cooks quickly and evenly.
  • Chop your bell peppers, broccoli, and green onions, setting them aside for easy access.

Cooking Base

  • In a pot, cook the rice noodles according to package instructions until al dente. After cooking, drain the noodles and rinse them with cold water to prevent sticking. Set aside.

Make the Sauce

  • In a small bowl, combine the soy sauce, oyster sauce, and brown sugar. Stir well until the sugar is completely dissolved.

Sear Beef

  • In a large pan or wok, heat the vegetable oil over medium heat. Add the minced garlic and swirl it around.
  • Then, add the sliced beef, stirring frequently. Cook until browned and just cooked through—about 3-4 minutes.

Add Vegetables

  • Toss in the bell peppers and broccoli. Stir-fry together for another 3-5 minutes, until the vegetables are just tender yet still crisp.

Combine with Sauce

  • Pour the sauce mixture over the top and stir everything together. Let bubble for a minute.

Finish with Noodles

  • Add the cooked rice noodles to the pan. Toss gently until everything is mixed well and cook for another minute.

Notes

To keep leftovers fresh, store in an airtight container in the fridge. Good for up to 3-4 days. For reheating, use the microwave or a pan over medium heat with a splash of water.
