Ingredients
  

For the bowl

  • 2 cups uncooked rice Any variety of rice can be used.
  • 2 small heads broccoli, chopped Ensure they are cut into small, bite-sized pieces.
  • 3 large chicken breasts, sliced into strips Can substitute with tofu or tempeh for vegetarian.

For the sauce

  • 1 tablespoon olive oil For cooking the chicken.
  • 1 teaspoon salt Adjust to taste.
  • ½ teaspoon pepper Adjust to taste.
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • ½ cup soy sauce Use tamari for gluten-free.
  • ½ cup honey Agave syrup can be used as a vegan substitute.
  • ¼ cup rice vinegar
  • 3 cloves garlic, minced
  • 2 tablespoons sriracha
  • 2 teaspoons sesame oil
  • 1 teaspoon ground ginger
  • 2 teaspoons arrowroot powder mixed with 2 tablespoons water to make a slurry Cornstarch can be used as a substitute.
  • ½ cup mayonnaise Greek yogurt can be used as a substitute for a tangy flavor.
  • 1 tablespoon sriracha For the spicy mayo.
  • 2-3 tablespoons water To adjust the mayo consistency.
  • Sesame seeds for topping

Instructions
 

Preparation

  • Start by washing your hands and sterilizing your kitchen area. Gather all your ingredients and tools, including a cutting board, a skillet, and bowls for serving.
  • Rinse the rice per package instructions, then boil it with the appropriate amount of water. Fluff once cooked and set aside.
  • Chop broccoli into small florets and steam or sauté for about 4-6 minutes until tender.

Cooking

  • Season sliced chicken with salt, pepper, smoked paprika, chili powder, onion powder, and oregano.
  • Heat olive oil in a skillet over medium-high heat, add the chicken, and sauté for about 6-8 minutes until golden brown.
  • In a separate bowl, whisk together soy sauce, honey, rice vinegar, minced garlic, sriracha, sesame oil, and ground ginger.
  • Pour sticky sauce over the chicken and let it simmer for about 3-5 minutes. Add the arrowroot slurry to thicken the sauce, cooking another couple of minutes.

Assembly

  • In each serving bowl, place a generous helping of rice, top it with sticky chicken and broccoli, drizzle with spicy mayo, and sprinkle with sesame seeds.

Notes
