Instructions
 

Preparation

  • Gather all your ingredients and ensure your butter and cream cheese are softened to room temperature.
  • Preheat your oven to 350°F (175°C) and grease your loaf pan.

Mixing Dry Ingredients

  • In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

Creaming Ingredients

  • In a large mixing bowl, beat the softened butter and granulated sugar together on medium speed until light and fluffy (about 3-4 minutes).
  • Add eggs one at a time, mixing well after each addition. Then mix in vanilla extract.
  • Add softened cream cheese and sour cream to the mixture and beat until smooth.

Combining Mixtures

  • Gradually fold the dry ingredients into the wet mixture using low speed.
  • Gently fold in diced strawberries.

Baking

  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Serving

  • Once cool, slice, dust with powdered sugar, and top with additional fresh strawberries.
