  • ½ cup fresh strawberries, chopped For layering in the pudding.
  • 1 teaspoon vanilla extract Optional but adds flavor.

Preparation

  • Gather all ingredients: chia seeds, milk, sweetener, strawberries, and vanilla extract.
  • In a medium bowl, combine the chia seeds, milk, honey or maple syrup, and vanilla extract.
  • Stir well until everything is combined, ensuring no clumping of chia seeds.
  • Let the mixture sit for about 5 minutes.
  • Stir again to ensure a creamy consistency.
  • Cover the bowl and refrigerate for at least 2 hours or overnight.
  • Puree 1 cup of strawberries in a blender for layering and set aside the chopped strawberries.
  • Layer the chia pudding with pureed and chopped strawberries in serving cups.
  • Serve immediately or refrigerate until ready to eat.

Notes

Store in an airtight container for up to 3 days. Can freeze unlayered pudding, but thaw in the refrigerator before serving. Avoid using overripe strawberries for best texture and flavor.
