Preparation

  • Preheat your oven to 350°F (175°C). Gather all ingredients.

Mixing the Crust

  • Combine gluten-free oats, almond flour, melted coconut oil, maple syrup, and vanilla extract in a large bowl. Stir until combined.
  • Press half of the mixture into a lined baking pan to form the base.

Preparing the Filling

  • In another bowl, combine diced strawberries, cornstarch, and lemon juice. Toss gently to coat.
  • Spread the strawberry mixture over the crust in the baking pan.

Baking

  • Sprinkle the remaining crust mixture over the strawberries.
  • Bake for 25-30 minutes until golden brown and strawberries are bubbling.

Cooling and Serving

  • Allow bars to cool before slicing. Serve immediately or store for later.

Notes

Store in an airtight container in the refrigerator for up to a week. They can also be frozen for up to three months.
