Ingredients
  

Strawberry Ice Cream

  • 2 cups fresh strawberries hulled and chopped
  • 1 cup heavy cream
  • ½ cup sweetened condensed milk
  • 1 tsp vanilla extract

Cookies

  • 16 cookies soft or chewy type preferred

Instructions
 

  • Blend strawberries into a purée. In a bowl, whip the heavy cream until stiff peaks form. Gently fold in condensed milk, vanilla extract, and strawberry purée. Freeze for 4 hours or until firm.
  • Place a scoop of strawberry ice cream between two cookies. Press gently to form a sandwich.
  • Serve immediately or wrap sandwiches individually and freeze until ready to enjoy.

Notes

Try dipping the edges of the ice cream sandwiches in melted chocolate or crushed nuts for extra flavor and fun!
