  • 1 whole lemon zest Zest of one lemon
  • ¼ cup fresh mint leaves, chopped Fresh mint enhances the flavor
  • ½ cup sugar Adjust according to taste
  • 1 cup water

Preparation

  • Wash the strawberries thoroughly, remove the hulls, and slice them.
  • Zest the lemon and chop the mint leaves finely.

Cooking the Base

  • In a blender, combine strawberries, lemon juice, lemon zest, mint leaves, sugar, and water. Blend until smooth.
  • Taste the mixture and add more sugar if desired, then blend again briefly.

Freezing Process

  • Pour the mixture into a shallow dish and freeze for about 1 hour.
  • Stir with a fork to break up ice crystals and return to freezer.
  • Check every 30 minutes, stirring until fully frozen, which may take 3 to 4 hours.

Serving

  • Once frozen, stir again to ensure a smooth texture, then scoop into bowls or serve in lemon halves.
  • Garnish with a mint sprig or lemon slice for presentation.

Notes

Store in an airtight container in the freezer for up to a month. Customize flavors with other fruits if desired.
