  • 1-2 tablespoons Lemon juice, freshly squeezed Adds a refreshing tang to balance sweetness.
  • 1 cup Whipped cream You can use heavy cream if preferred.
  • 2 teaspoons Gelatin Used to help the mousse set.
  • 1 teaspoon Vanilla extract Enhances the overall flavor.
  • a small amount Hot water Needed for dissolving gelatin.

Instructions
 

Preparation

  • Begin by gathering all your ingredients on a clean, flat surface.
  • In a bowl, combine the fresh strawberry puree with freshly squeezed lemon juice and set aside.
  • In a separate bowl, whip the cream until soft peaks form, approximately 2-3 minutes.
  • Dissolve the gelatin in a small amount of hot water and let it cool slightly.
  • Mix the cooled gelatin into the strawberry mixture.
  • Gently fold in the whipped cream with a spatula to maintain the airy texture.
  • Transfer the mousse into a container and chill in the refrigerator for at least 30 minutes.

Assembly

  • Prepare your cake layers while the mousse chills.
  • Spread an even layer of mousse between the cooled cake layers.
  • Return the assembled cake to the fridge to let it set together for another 30 minutes.

Notes

Store in an airtight container in the refrigerator, ideally within three days. Not recommended for freezing.
