  • 2 ¼ teaspoons gelatin (unflavored) To be bloomed before use.
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon juice (freshly squeezed)
  • Water for blooming gelatin

Preparation

  • Start by gathering all your ingredients. Wash your strawberries thoroughly and allow them to dry.
  • Using a blender or food processor, puree the strawberries until smooth. Set aside.
  • In a small bowl, sprinkle gelatin over a few tablespoons of water. Let it sit for about 5-10 minutes to allow the gelatin to bloom and soften.

Combining Ingredients

  • In a mixing bowl, combine the fresh strawberry puree, lemon juice, and vanilla extract.
  • In a separate bowl, whip the heavy cream until soft peaks form.
  • Gently fold the whipped cream into the strawberry mixture until no streaks are visible.
  • Heat the bloomed gelatin over low heat until it’s fully dissolved, ensuring it doesn't boil.
  • Slowly pour the gelatin mixture into the strawberry-mousse blend while gently stirring.

Chilling and Serving

  • Transfer the combined mixture into a bowl or an airtight container and chill in the refrigerator for about 1-2 hours until it thickens.
  • Once set, use the filling to layer in your favorite cake or enjoy as a standalone dessert.

Notes

Store the filling in an airtight container in the refrigerator for 3-4 days. Consider adding lemon zest or white chocolate for extra flavor.
