Preparation

  • Gather all your ingredients, ensuring cream cheese is softened.
  • Preheat your oven to 350°F (175°C).

Crust

  • Mix graham cracker crumbs with melted butter and press into an 8x8 inch baking pan.
  • Bake the crust for about 10 minutes until golden and let it cool completely.

Cheesecake Filling

  • Beat softened cream cheese until smooth, then gradually add powdered sugar and vanilla extract.
  • In a separate bowl, whip heavy cream to stiff peaks.
  • Gently fold the whipped cream into the cream cheese mixture.
  • If using gelatin, dissolve in warm water and then fold into the strawberry puree before adding to the mixture.

Assembly and Chilling

  • Pour cheesecake filling over the cooled crust and spread evenly.
  • Chill in the refrigerator for at least 4 hours or until set.
