Ingredients
  

For the Sponge Cake

  • ½ cup strawberries, chopped tiny
  • ¼ cup whole milk
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • ¾ cup all-purpose flour Can substitute with gluten-free flour for gluten-free version.
  • 1 teaspoon vanilla extract
  • ¾ cup white sugar Natural sweeteners can be used as substitutes.
  • 4 large eggs Can substitute with aquafaba for vegan option.

For the Cheesecake Filling

  • 1 teaspoon vanilla extract
  • 1 cup heavy cream, whipped Can be substituted with coconut whipped cream.
  • ½ cup powdered sugar Natural sweeteners can be used as substitutes.
  • 8 ounces softened cream cheese Use dairy-free cream cheese for a dairy-free version.

For the Strawberry Shortcake Crumble

  • 2 tablespoons melted unsalted butter
  • 2 tablespoons strawberry gelatin mix
  • 1 cup golden Oreo cookies, crushed

For Topping

  • Whipped cream
  • Fresh strawberries, cut up
  • A bit of strawberry sauce to pour on

Instructions
 

Preparation

  • Gather all your ingredients and preheat your oven to 350°F (175°C). Line a 9x13 inch pan with parchment paper.
  • In a large bowl, combine eggs and sugar, beating with a hand mixer until fluffy.
  • In a separate bowl, sift together salt, baking powder, and flour.
  • Gently stir the dry mixture into the egg and sugar mixture until no dry clumps remain.
  • Mix in the milk and fold in the chopped strawberries.
  • Pour the batter into the lined pan and bake for 10-12 minutes, until it springs back when poked.
  • Once baked, roll the warm cake with the parchment paper to cool in a log shape.

Cheesecake Filling Preparation

  • Beat together the softened cream cheese, powdered sugar, and vanilla in a bowl until smooth.
  • Whip the heavy cream until soft peaks form and gently fold it into the cream cheese mixture.
  • Unroll the cooled cake, spread the cheesecake filling, and roll back up tightly. Refrigerate for at least 2 hours.

Crumble and Serve

  • Mix crushed Oreos with melted butter and gelatin.
  • Spread a thin layer of cheesecake filling on the outside of the rolled cake and press the crumble into it.
  • Top with whipped cream, fresh strawberries, and drizzle with strawberry sauce before slicing and serving.

Notes

For best results, avoid overmixing the batter and don't skip the chilling time. You can customize the flavor profile with different fruits or lemon juice.
