Preparation

  • Gather all the necessary ingredients to ensure you have everything you need before you start.
  • In a large mixing bowl, combine the rolled oats, almond butter, and honey. Use a spatula to mix until everything is well blended and sticky.
  • Chop the dried strawberries into small pieces, then add them to the bowl along with the shredded coconut and vanilla extract. Stir until well incorporated.
  • Make sure all the ingredients are evenly mixed together. The mixture should hold together well but still be slightly crumbly.
  • Use your hands to take small amounts of the mixture and roll them into bite-sized balls.
  • Place the formed bites on a lined baking sheet, ensuring they have a little space between them to prevent sticking.
  • Refrigerate the baking sheet for about 30 minutes to help the bites firm up.
  • After chilling, transfer the energy bites to an airtight container and store them in the fridge to maintain freshness.
