  • 2 pieces chicken breasts (grilled and sliced)
  • 1 cup corn kernels (fresh, frozen, or canned)
  • ½ cup black beans (drained and rinsed)
  • ¼ cup diced red onion
  • ¼ cup diced tomatoes
  • ¼ cup crumbled cotija cheese Can substitute with feta or dairy-free cheese
  • 2 tablespoons chopped fresh cilantro (for garnish)

Cooking Ingredients

  • 1 tablespoon olive oil For sautéing corn
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon cumin
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Lime Crema Ingredients

  • ½ cup sour cream or Greek yogurt Dairy substitute available
  • 1 piece Juice of 1 lime
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt

Prepare Ingredients

  • Gather and prep all your ingredients. Cook your rice according to package directions if you haven't already done so. Grill the chicken breasts until they are cooked through and nicely charred, then slice them into strips.

Cook the Base

  • Heat a skillet over medium heat and add the olive oil. Once hot, add the corn kernels and sauté for about 3-4 minutes until lightly charred.

Season the Corn

  • Sprinkle the charred corn with chili powder, smoked paprika, cumin, salt, and black pepper. Stir to combine and set aside.

Make the Lime Crema

  • In a small bowl, mix together the sour cream (or Greek yogurt), freshly squeezed lime juice, garlic powder, and salt.

Assemble the Bowls

  • Start with a base of cooked rice in a bowl. Layer the grilled chicken slices on top, followed by the sautéed corn.

Add the Veggies

  • Top with black beans, diced tomatoes, and red onion.

Crumble the Cotija Cheese

  • Sprinkle the crumbled cotija cheese over the layered ingredients.

Drizzle with Lime Crema
