Dressing Ingredients

  • ½ cup mayonnaise Use Greek yogurt for a lighter option
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika Adds depth of flavor
  • 1 teaspoon salt Adjust to taste
  • ½ teaspoon black pepper
  • Optional crumbled feta cheese for garnish

Preparation

  • Gather all your ingredients and ensure the grilled chicken is diced and the vegetables are cleaned and chopped.

Cooking the Corn

  • If using grilled corn, place it over medium heat until slightly charred. If using canned corn, drain it and set aside.

Mix Ingredients

  • In a large mixing bowl, add the diced chicken, corn, diced cucumber, and chopped red onion. Mix well.
