  • 4 stalks celery stalks Fresh, crisp stalks
  • 1 cup cream cheese, softened Make sure it's at room temperature
  • ½ cup shredded cheddar cheese Can substitute with other cheese types
  • ¼ cup diced green onions Adds flavor and freshness
  • ¼ cup diced bell pepper Adds color and crunch
  • ½ teaspoon garlic powder To taste

Preparation

  • Gather all your ingredients and wash the celery stalks thoroughly under cold water. Dry them with a paper towel.
  • Cut the celery stalks into 3-inch pieces.
  • In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, diced green onions, diced bell pepper, garlic powder, salt, and pepper. Blend until smooth.
  • Taste the filling and adjust seasoning if necessary.

Assembly

  • Stuff the celery pieces generously with the cream cheese mixture using a spoon or piping bag.
  • Place the stuffed celery on a platter and cover with plastic wrap. Chill in the refrigerator for at least 30 minutes.
  • After chilling, cut the stuffed celery in half for easier handling.

Notes

Store any leftovers in an airtight container in the refrigerator for up to three days. Do not freeze as the texture will change.
