  • 4 chicken breasts boneless and skinless
  • 4 oz brie cheese sliced
  • ½ cup cranberries dried or fresh
  • 1 tbsp olive oil
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp fresh thyme optional
  • ½ cup chicken broth

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Slice a pocket into each chicken breast without cutting through completely.
  • Stuff each pocket with brie cheese and cranberries.
  • Season the outside of the chicken with salt, pepper, garlic powder, onion powder, and thyme.
  • Heat olive oil in a skillet and sear chicken for 4–5 minutes on each side until golden brown.
  • Transfer chicken to a baking dish, pour chicken broth around it, and bake for 20–25 minutes until fully cooked (165°F internal temperature).
  • Let rest for 5 minutes before serving. Enjoy warm with sides of your choice.

Notes

To enhance flavor, garnish with fresh herbs or a drizzle of balsamic reduction before serving. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months.
