Ingredients
  

  • 8 oz cream cheese softened
  • ¼ cup sour cream
  • 1 tbsp lemon juice
  • ¾ cup powdered sugar plus more for topping
  • 2 tsp vanilla extract divided
  • 8 oz strawberries thinly sliced
  • 3 tbsp granulated sugar
  • 10-12 slices brioche bread 3/4-inch thick, preferably stale
  • 4 large eggs
  • 1 cup half and half or whole milk
  • 1 tsp ground cinnamon
  • 1 tbsp vegetable oil divided
  • 6 tbsp butter divided
  • powdered sugar, fresh berries, syrup, whipped cream for serving

Instructions
 

  • Prepare the strawberries by tossing sliced strawberries with sugar and let sit for 10 minutes to macerate.
  • Make the filling: Beat softened cream cheese, sour cream, lemon juice, powdered sugar, and 1 tsp vanilla until smooth and creamy.
  • Prepare the egg mixture: Whisk eggs, half and half, cinnamon, and 1 tsp vanilla in a shallow dish.
  • Assemble the sandwiches: Spread cream cheese filling on one slice of brioche, top with strawberries, then cover with another slice. Repeat to make 5-6 sandwiches.
  • Heat skillet: Melt butter with vegetable oil over medium heat.
  • Dip sandwiches into the egg mixture, coating both sides, and cook for 2-3 minutes per side until golden brown.
  • Keep warm in a low oven (200°F) until ready to serve. Garnish with powdered sugar, berries, syrup, or whipped cream.

Notes

For best results, use slightly stale bread so it holds up to the filling and egg mixture. Try seasonal fruits like blueberries, raspberries, or peaches as variations.
