Ingredients
  

For the Sugar Cookie Crust

  • 1 cup All-purpose flour
  • ½ tsp Baking soda
  • ½ tsp Salt
  • ¾ cup Unsalted butter (room temperature)
  • 1 cup Regenerative Organic Certified® Cane Sugar from Wholesome
  • 1 tsp Pure vanilla extract
  • 1 Large egg (room temperature)
  • 1 Large egg yolk (room temperature)
  • cup Christmas sprinkles (jimmies)

For the Cheesecake Filling

  • 32 oz Cream cheese (room temperature)
  • cup Regenerative Organic Certified® Cane Sugar from Wholesome
  • ¾ cup Sour cream (room temperature or Greek yogurt)
  • ½ cup Heavy cream (room temperature)
  • 1 tsp Pure vanilla extract
  • 4 Large eggs (room temperature)
  • 1 cup White chocolate chips

For the White Chocolate Ganache

  • cup Heavy cream
  • 1 cup White chocolate chips

Preparation

  • Begin by gathering all your ingredients and preheating your oven to 325°F (165°C). Grease your 9-inch springform pan.

Make Sugar Cookie Base

  • In a medium bowl, whisk together flour, baking soda, and salt.
  • In another bowl, cream together butter and cane sugar until fluffy. Beat in the egg, egg yolk, and vanilla.
  • Gradually add the dry ingredients, mixing until just combined. Fold in sprinkles.

Bake the Crust

  • Press the cookie dough into the greased pan evenly. Bake for 12-15 minutes until golden. Let it cool slightly.

Make Cheesecake Filling

  • In a large mixing bowl, beat the cream cheese and cane sugar until smooth. Add sour cream, heavy cream, and mix well.
  • Add eggs one at a time, fully incorporating after each addition. Stir in vanilla.

Assemble and Bake

  • Pour the filling into the cooled crust and spread evenly.
  • Bake for about 45-55 minutes until the center is set but still slightly wobbly. Cool for an hour at room temperature.

Prepare Ganache

  • Heat heavy cream until simmering. Pour over white chocolate chips, stir until smooth.

Finish the Cheesecake

  • Once chilled, drizzle ganache over cheesecake. Let set for 30 minutes before serving.
  • Garnish with extra cookie dough balls or sprinkles if desired.

Serve

  • Slice cheesecake into wedges and serve chilled.

Notes

For better results, let all ingredients come to room temperature and consider high-quality chocolate for the ganache. Skipping chilling time may lead to a less firm cheesecake.
