Wet Ingredients

  • ¾ cup vegetable oil Keeps cookies soft
  • 1 cup granulated sugar Plus additional for rolling
  • ¼ cup full-flavor molasses Provides depth of flavor
  • 1 large egg Use room temperature

Preparation

  • Gather all the ingredients and pre-measure them.
  • In a medium bowl, whisk together the flour, ground cloves, ground ginger, baking soda, ground cinnamon, and salt.
  • In a separate bowl, beat the vegetable oil and granulated sugar until well blended.
  • Add the molasses and room temperature egg to the sugar-oil mixture and mix until well combined.
  • Gradually add the dry ingredient mixture to the wet ingredients and mix until just combined.
  • Cover the dough and refrigerate for at least 2 hours.

Baking

  • Preheat your oven to 375°F and position the oven rack one level above center.
  • Form the dough into 1-inch balls, roll them in granulated sugar, and place them on prepared baking sheets 2 inches apart.
  • Bake the cookies for 8 to 10 minutes, until puffed and slightly crackly on top.
  • Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool fully.

Notes

Store cookies in an airtight container at room temperature for up to one week. For longer storage, freeze individually wrapped cookies for up to three months.
