  • 4 large eggs Can be substituted with flaxseed meal mixed with water for a vegan option.
  • 1 teaspoon vanilla extract

  • 2 cups chopped pecans Can be replaced with chocolate chips or dried fruits like cranberries.

Preparation

  • Gather all your ingredients and pre-measure them for a smooth process.
  • Preheat your oven to 350°F (175°C).
  • Grease a 9×13-inch baking dish with butter or cooking spray. Alternatively, line it with parchment paper.

Mixing

  • In a large mixing bowl, whisk together the sugar, brown sugar, vegetable oil or melted butter, and eggs until smooth.
  • In a separate bowl, stir together the flour, baking powder, and salt.
  • Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Avoid overmixing.

Finishing Touches

  • Stir in the vanilla extract.
  • Fold in the chopped pecans evenly into the batter.
  • Pour the batter into the prepared baking dish and spread it evenly.

Baking

  • Bake in the preheated oven for 30–35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  • Allow to cool completely in the pan before slicing into squares.
