  • 1 cup pineapple chunks
  • 1 cup rice (white or brown)

  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 teaspoon ginger, grated
  • to taste Salt and pepper

Preparation

  • Gather all your ingredients and cut the chicken into cubes, mince the garlic, and grate the ginger.

Cooking

  • In a large pan, heat the olive oil over medium heat.
  • Add the cubed chicken and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5–7 minutes.
  • Stir in the minced garlic and grated ginger. Sauté for about one minute.
  • Add the pineapple chunks, soy sauce, and honey. Stir to combine.
  • Carefully add 2 cups of water and bring the mixture to a boil.
  • Reduce heat to low, cover, and simmer for 15 to 20 minutes, or until the rice is tender.
  • Check for doneness; the rice should be fluffy and chicken tender.
  • Taste and adjust seasoning as needed.
  • Serve the dish garnished with chopped green onions.

Notes

This dish can be customized with various vegetables and proteins. For a vegan option, replace chicken with tofu or chickpeas.
