Ingredients
  

Chickpea Base

  • 1 can chickpeas, drained and rinsed

Coating

  • 2 tablespoons olive oil Can substitute with coconut oil
  • 3 tablespoons sugar Can substitute with coconut sugar or stevia
  • 1 tablespoon cinnamon
  • ¼ teaspoon salt
  • 1 pinch cayenne pepper Optional for heat

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Pat the chickpeas dry using a clean paper towel.

Coating the Chickpeas

  • Place the dried chickpeas in a bowl and drizzle with olive oil. Toss to coat evenly.
  • In a separate bowl, mix sugar, cinnamon, and salt. Add a pinch of cayenne if desired.
  • Sprinkle the sugar mixture over the chickpeas and toss until they are evenly coated.

Roasting

  • Spread the chickpeas in a single layer on a baking sheet.
  • Roast in the preheated oven for 25-30 minutes, stirring halfway through, until golden brown and crunchy.
  • Remove from the oven and let them cool before serving.

Serving

  • Enjoy as a snack, or sprinkle over yogurt or oatmeal for added crunch.

Notes

Store leftovers in an airtight container at room temperature for 3-5 days. Reheating is recommended in the oven at 350°F (175°C) for about 5-10 minutes to restore crunchiness.
