  • 1 cup pitted dates, chopped Soak in warm water if hard.
  • 1 cup rolled oats Use certified gluten-free for a gluten-free version.
  • ½ cup chopped nuts (walnuts or pecans) Can omit if nut-free.
  • ¼ cup almond flour or whole wheat flour For gluten-free, use a suitable flour alternative.
  • ¼ teaspoon baking soda
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • ¼ cup honey or maple syrup Optional for extra sweetness.

Preparation

  • Gather all your ingredients and chop the dates into small pieces if necessary.
  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the chopped dates, rolled oats, chopped nuts, almond flour, baking soda, and salt. Stir everything together until well-distributed.
  • Add in the vanilla extract and honey or maple syrup. Mix until all ingredients are evenly coated and combined. The mixture should be slightly sticky.
  • Use a tablespoon to scoop out the mixture and place it on your prepared baking sheet. Leave some space between each cookie.
  • Using the back of a spoon, gently flatten each cookie slightly.
  • Bake for 10-12 minutes until lightly golden around the edges.
  • Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.

  • Enjoy your Sweet Date Cookies warm, or store in an airtight container for later.
