Ingredients
  

  • 2 cups (mashed) Sweet Potatoes cooked and peeled
  • 1 can (14 oz) Sweetened Condensed Milk
  • 2 large Eggs
  • ¼ cup Brown Sugar
  • 1 teaspoon Ground Cinnamon
  • ¼ teaspoon Ground Nutmeg
  • 1 teaspoon Vanilla Extract
  • 1 9-inch Pie Crust unbaked or store-bought

Instructions
 

  • Preheat oven to 375 °F (190 °C).
  • Line the pie crust with parchment and fill with pie weights; bake for ~8 minutes (blind bake).
  • In a mixing bowl, combine mashed sweet potatoes, sweetened condensed milk, eggs, brown sugar, cinnamon, nutmeg, and vanilla; mix until smooth.
  • Remove pie weights and parchment, then pour the sweet potato filling into the pie shell.
  • Bake for 30–35 minutes, or until the center no longer jiggles.
  • Allow pie to cool completely before slicing. Serve as is or with whipped cream.
