  • 6 large large eggs
  • 2 cups Swiss chard, chopped Can substitute with spinach or kale
  • ½ cup onion, diced Can substitute with shallots or leeks
  • ½ cup bell pepper, diced
  • ½ cup feta cheese, crumbled Can substitute with goat cheese or cheddar
  • 2 tablespoons olive oil Can substitute with avocado oil or butter
  • to taste salt To enhance flavor
  • to taste pepper To enhance flavor

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and bell pepper. Sauté for about 5 minutes or until they soften and the onion turns slightly translucent.
  • Add the chopped Swiss chard to the skillet and cook for an additional 3–4 minutes until it wilts and reduces in size.
  • In a mixing bowl, crack 6 large eggs and whisk them together, adding salt and pepper to taste.
  • Pour the egg mixture over the sautéed vegetables in the skillet and gently stir to combine.
  • Sprinkle the crumbled feta cheese evenly over the top of the egg mixture.
  • Cook the skillet on the stove for about 2–3 minutes, letting the edges set while the middle remains soft.
  • Transfer the skillet to the preheated oven and bake for 15–20 minutes or until fully set and a light golden color appears on top.
  • Check for doneness by gently shaking the skillet; the center should be firm and not jiggle.
  • Let the frittata cool slightly before slicing into wedges and serving warm.

Notes

Best served warm or at room temperature. Can be stored in the refrigerator for up to 4 days or frozen for up to 2 months. Reheat to enjoy it again!
