Ingredients
  

For the Rice

  • 1 cup uncooked white rice
  • 2 cups water or chicken broth Chicken broth for added flavor

For the Meat Mixture

  • 1 lb ground beef or turkey Use turkey for a lighter option
  • 1 packet taco seasoning About 1 oz
  • 1 can black beans 15 oz, drained and rinsed
  • 1 cup corn Frozen or canned
  • 1 cup diced tomatoes Fresh or canned

For the Toppings

  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa For topping
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • to taste Fresh cilantro For garnish
  • to taste Lime wedges For garnish

Preparation

  • Gather all your ingredients and measure them out. Wash and dice your tomatoes, shred the lettuce, and gather any optional toppings like lime wedges or cilantro.

Cooking the Rice

  • In a medium saucepan, bring 2 cups of water or chicken broth to a boil. Once boiling, add 1 cup of uncooked white rice and a pinch of salt. Stir it once, cover with a lid, and reduce heat to a simmer. Allow it to cook for about 18-20 minutes, or until the rice is tender and fluffy.

Preparing the Meat

  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 lb of ground beef or turkey. Break it up and cook until browned (about 5-7 minutes). Drain any excess fat if using beef.
  • Sprinkle in the taco seasoning over the browned meat. Mix well and add a splash of water for moisture. Let it simmer for about 2-3 minutes.

Combining Ingredients

  • Add the drained black beans, corn, and diced tomatoes into the meat mixture. Stir together and let it cook for another 3-5 minutes until heated through.

Serving

  • Once the rice is fully cooked, fluff it with a fork. In serving bowls, add a generous scoop of rice, top with the meat mixture, layer on your shredded lettuce, and sprinkle with shredded cheddar cheese.
  • Top with salsa, and optional cilantro and lime wedges for freshness.

Notes

Best served immediately. Can be customized with different proteins or toppings to fit dietary preferences.
