  • 1 bag frozen tater tots Ensure they are certified gluten-free if needed.
  • 8 large eggs Can substitute with silken tofu for a vegan version.
  • 1 cup milk Dairy-free alternatives like almond milk can be used.
  • 2 cups shredded cheese Cheddar or your choice of cheese.
  • 1 cup diced vegetables Like bell peppers or onions, optional.
  • to taste Salt and pepper
  • 1 cup cooked breakfast sausage or bacon Optional, to add protein.

Instructions
 

Preparation

  • Start by preparing all your ingredients. Take the bag of frozen tater tots out of the freezer to let them thaw slightly.
  • Preheat your oven to 375°F (190°C).
  • In a large bowl, add the eggs and milk. Season with salt and pepper and whisk until light and frothy.
  • Grease a 9x13 inch baking dish with cooking spray or butter.

Assembly

  • Spread the thawed tater tots evenly across the bottom of the greased baking dish.
  • Sprinkle diced vegetables over the tater tots, if using.
  • Distribute cooked and crumbled sausage or bacon over the vegetables.
  • Pour the egg and milk mixture evenly over the top.
  • Top with shredded cheese.

Baking

  • Place the baking dish in the preheated oven and bake for 30-35 minutes, until the eggs are set and the cheese is golden.
  • Remove from the oven and let cool slightly before serving.

Notes

Store leftovers in an airtight container for up to 3 days. Can also be frozen for longer storage.
