  • 1 pound breakfast sausage Use turkey or plant-based sausage for a healthier option.
  • 1 bag frozen tater tots Do not thaw before use.
  • 6 large eggs
  • 1 cup milk Dairy or non-dairy milk can be used.
  • 1 cup shredded cheese Cheddar or preferred cheese.
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease your baking dish.
  • In a skillet over medium heat, cook the breakfast sausage until fully browned, crumbling it as it cooks (5-7 minutes). Drain any excess fat.
  • In a large mixing bowl, whisk together the eggs and milk until well combined.
  • Spread the frozen tater tots evenly across the bottom of the greased baking dish.
  • Pour the cooked sausage evenly over the tater tots.
  • Pour the egg mixture over the sausage and tater tots.
  • Sprinkle shredded cheese on top of everything.
  • Season with salt and pepper (and other seasonings if desired).

Baking

  • Bake in the preheated oven for about 25-30 minutes, until the cheese is bubbly and the eggs are set. A knife inserted should come out clean.

Serving

  • Let cool slightly, garnish with chopped green onions if desired, and serve warm.

Notes

This casserole makes excellent leftovers and can be easily customized with vegetables or different cheeses. Store in the fridge for 3-5 days or freeze for 2-3 months.
