  • 2 tablespoons honey Can replace with maple syrup for a vegan option.
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon lime juice Freshly squeezed lime juice is recommended.
  • ¼ cup water
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli) Feel free to customize based on preferences.
  • ¼ cup chopped peanuts for garnish Roast for extra flavor.

Instructions
 

Preparation

  • Gather all your ingredients. Dice the chicken, chop the vegetables, and mince the garlic and ginger.

Cooking

  • In a large pan, heat a little oil over medium heat. Add the diced chicken and cook until it turns golden and is no longer pink inside, about 6-8 minutes.
  • While the chicken is cooking, prepare the rice noodles according to package instructions. Drain and set aside.
  • In a medium bowl, whisk together the peanut butter, soy sauce, honey, minced garlic, grated ginger, lime juice, and water until smooth.
  • Once the chicken is cooked, add mixed vegetables to the pan and sauté for about 3-4 minutes until they are bright in color and slightly tender.
  • Pour the peanut sauce over the chicken and vegetables, stirring to coat evenly. Let it simmer for 2-3 minutes.
  • Add the cooked rice noodles to the pan, tossing gently until everything is well mixed. Cook for an additional 2 minutes.
  • Spoon the noodle bowls into individual servings. Garnish with chopped peanuts and fresh cilantro.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For longer storage, freeze individual portions. Reheat in a microwave or on the stovetop with added moisture.
