Ingredients
  

Brine Base

  • 1 cup salt Enhances flavor and helps in moisture retention.
  • 1 cup brown sugar Adds sweetness and balances the saltiness.
  • 1 gallon water Forms the base of the brine.

Aromatics

  • 1 tablespoon peppercorns Infuses a subtle heat and complexity.
  • 2 tablespoons thyme Adds a fragrant herbaceous flavor.
  • 2 tablespoons crushed garlic Contributes an aromatic and savory note.
  • 2 tablespoons rosemary Offers a distinct and woody flavor.

Optional Addition

  • 1 tablespoon apple cider vinegar Imparts acidity and brightness to the brine.

Preparation

  • Gather all the ingredients listed above. Make sure to measure them out for easy access during the cooking process.
  • In a large pot, combine 1 cup salt, 1 cup brown sugar, and 1 gallon of water. Stir the mixture over medium heat until salt and sugar are fully dissolved.
  • Once the base is ready, add 1 tablespoon of peppercorns, 2 tablespoons of thyme, 2 tablespoons of crushed garlic, and 2 tablespoons of rosemary. If using apple cider vinegar, add it now.
  • Allow the brine mixture to cool completely before using.
  • Place your turkey in a large container or brining bag and pour the brine over the turkey, ensuring it's fully submerged.
  • Cover the container or seal the bag and refrigerate the turkey for 12-24 hours.
  • After brining time, remove the turkey from the brine and rinse it thoroughly under cold water.
  • Pat the turkey dry with paper towels before roasting.
  • Proceed with your preferred roasting method and enjoy your perfectly brined turkey.

Notes

Store leftover brine in an airtight container in the fridge for up to a week. Avoid boiling the brine when reheating to maintain flavor integrity.
