Ingredients
  

Truffle Centers

  • 1 box Thin Mint cookies about 9–10 oz, finely crushed
  • 8 oz cream cheese softened
  • ½ tsp mint extract optional for extra mint flavor

Chocolate Coating

  • 12 oz chocolate chips dark or semi-sweet, for dipping
  • green candy melts or white chocolate optional for drizzle or decoration

Instructions
 

  • Place Thin Mint cookies in a food processor and pulse until finely crushed. Transfer crumbs to a mixing bowl.
  • Add softened cream cheese and mint extract (if using) to the cookie crumbs. Mix until a smooth dough forms.
  • Scoop 1-tablespoon portions of the mixture and roll into smooth balls. Place them on a parchment-lined baking sheet.
  • Freeze the truffle centers for 20–30 minutes until firm.
  • In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring between each until smooth.
  • Dip each chilled truffle ball into the melted chocolate, tapping off any excess. Place back on the parchment paper.
  • If desired, melt green candy melts or white chocolate and drizzle over the truffles for decoration. Chill again for 15–20 minutes until set.

Notes
