  • 14 oz firm tofu Acts as the main protein source, giving the dish structure and texture.

Preparation

  • Preheat your oven to 375°F (190°C). Gather all your ingredients and set them out in a comfortable workspace.
  • Drain the tofu carefully and wrap it in a clean kitchen towel or paper towels. Press it gently to extract as much water as possible.
  • In a pan, heat the olive oil over medium heat. Add the chopped mushrooms and walnuts, sautéing until the mushrooms soften and release their moisture, about 5-7 minutes.
  • Using your hands or a fork, crumble the pressed tofu into a large bowl.
  • Into the bowl with the crumbled tofu, add the cooked quinoa, sautéed mushrooms and walnuts, nutritional yeast, soy sauce, garlic powder, onion powder, thyme, rosemary, and salt and pepper to taste. Mix thoroughly until well combined.
  • Shape the mixture into a turkey shape and place it in a gently greased baking dish.
  • Bake for 30-40 minutes until the exterior becomes golden and crisp.
  • Once baked, let it rest for a few minutes, then slice and serve warm with your favorite vegan gravy.

Notes

Tofu Turkey can be customized with your favorite spices or additional vegetables. It can last up to 4-5 days in the refrigerator and can be frozen for up to 3 months.
