  • 2 pounds tomatoes, chopped Use ripe, juicy tomatoes for best flavor.
  • 1 cup sugar Can substitute with honey or sugar alternatives.
  • ½ cup apple cider vinegar Can substitute with white vinegar or lemon juice.
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon cinnamon
  • ¼ teaspoon cloves
  • 1 tablespoon lemon juice

Preparation

  • Wash and chop the tomatoes, removing any stems or blemishes.

Cooking

  • In a large pot, combine the chopped tomatoes with sugar, apple cider vinegar, salt, black pepper, cloves, cinnamon, and lemon juice. Stir well to combine.
  • Place the pot over medium heat and bring the mixture to a boil, stirring frequently.
  • Once boiling, reduce the heat to medium-low and allow it to simmer, stirring occasionally.
  • Let the Tomato Jam simmer for about 30-45 minutes, until it thickens and coats the back of a spoon.
  • Remove from heat and let cool slightly before transferring to sterilized jars.
  • Pour the warm jam into jars, leaving a small space at the top.
  • Seal the jars tightly and let them cool completely at room temperature before storing in the refrigerator.

Notes

Store in the refrigerator for 2-3 weeks or freeze for up to 6 months. For a richer taste, consider roasting tomatoes before chopping.
