Traditional Irish Bread Pudding with Whiskey Sauce

Ingredients
  

  • 6 cups Irish soda bread cubed
  • 4 large eggs
  • 2 cups milk
  • 1 cup heavy cream
  • ¾ cup sugar
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • ½ cup raisins optional
  • ¼ cup butter melted, divided
  • ½ cup Irish whiskey for sauce
  • ¼ cup sugar for sauce

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a baking dish with melted butter.
  • In a large bowl, whisk together eggs, milk, heavy cream, sugar, vanilla, cinnamon, and salt until smooth.
  • Stir in the cubed Irish soda bread and raisins if using. Let soak for 30 minutes.
  • Pour mixture into prepared baking dish and drizzle with half the melted butter.
  • Bake for 45–50 minutes, until golden brown and set in the center.
  • Meanwhile, make the whiskey sauce: in a saucepan, combine Irish whiskey, sugar, and remaining melted butter. Simmer until sugar dissolves and sauce thickens slightly.
  • Serve warm bread pudding with generous drizzles of whiskey sauce.

Notes

For a non-alcoholic version, replace whiskey with apple juice or caramel sauce. Bread pudding can be made a day ahead and reheated before serving.
