Base Ingredients

  • 1 package instant pistachio pudding mix Ensure it's gluten-free if needed.
  • 1 cup whipped topping Use sweetened whipped topping for best flavor.
  • 1 can pineapple chunks, drained Thoroughly drain to avoid excess liquid.
  • 1 cup mini marshmallows

Nut Toppings

  • ½ cup chopped pistachios Optional for added crunch.
  • ½ cup chopped walnuts or pecans Optional, can be omitted or substituted.

Preparation

  • Gather all your ingredients and drain the pineapple thoroughly.

Mixing

  • In a large bowl, combine the instant pistachio pudding mix and whipped topping until well blended.
  • Gently fold in the drained pineapple chunks.
  • Fold in the mini marshmallows.
  • If using, fold in the chopped walnuts or pecans.

Chilling & Serving

  • Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  • Serve chilled, divided into bowls or a large serving dish, optionally garnished with extra chopped pistachios or mint leaves.
